Rich, luscious and packed with sherry character, this Bimber layers ripe figs, raisins and dark berries with sticky caramel, chocolate and roasted nuts. Orange peel and warming spice lift the heavier sweetness, while touches of coffee and oak bring depth and structure. Bimber Pedro Ximénez Cask Release No.1 was bottled in November 2020 exclusively for Bimber Klub members, combining ex bourbon maturation with a Pedro Ximénez sherry finish and producing 1,198 bottles. Unlike many thinly traded Bimber releases, we can trace several actual auction results. It achieved €130 in April 2022, rose to €160 in August 2023, but subsequently fell to €120 in March 2025. Using the comparable 2022 and 2025 achieved prices gives an indicative CAGR of approximately −2.6%. Our view: the first release and Klub exclusivity give it collector interest, but the secondary market has not demonstrated sustained appreciation. Unless early Bimber releases experience a broader revival, this is one we would drink rather than hold purely for investment.
