Milk & Honey Apex Rum Cask is an intensely flavourful Israeli single malt, bursting with tropical fruit, toasted coconut and creamy toffee. Rich molasses and dark chocolate are balanced by warming spices and a touch of fresh citrus, while the rum cask influence brings a vibrant sweetness without overpowering the whisky's character. Full-bodied and beautifully rounded, it finishes with lingering notes of oak, mint and exotic fruit, creating a bold yet remarkably well-balanced dram.

Released in 2021 as Apex Batch 004, this was an adventurous early release from Israel’s first whisky distillery, with only 1,420 bottles produced after full maturation in Jamaican and Cuban rum casks. That scarcity looks attractive on paper, but the collector market has yet to give the bottle a convincing investment story. More importantly, bottles are still available in the UK today for roughly £83 to £100, several years after release, suggesting supply continues to outweigh collector urgency. Auction appearances are too infrequent to establish a credible CAGR rather than manufacture one from isolated sales. Our view: genuinely limited and an interesting piece of M&H’s early history, but rarity alone has not created momentum. For now, we would enjoy the whisky and watch the market from the sidelines.
